Vegetarian Mexican Fried Rice

I love mexican foods which is spicy somewhat and cheesy yet deliciousely fills my mouth. Today let me give one of my favourite mexican rice recipe. You can avoid cheese if you are cautious about the calories and fat it gives to you. Here also i have omitted cheese as i feel to omit :-).  Vegetarian Mexican Fried Rice is cooked rice tossed with kidney beans, corns, peppers and seasoned with some ordinary spices like salt and cayenne pepper powder. This will make cooking process faster. The amount of beans and all other veggies can be varied as per your taste. This recipe is spicier, so you can balance the spiciness by adding sugar or adjust the red chilli powder. You can also use ready-made enchilada sauce for this recipe.

 Vegetarian Mexican Fried Rice Recipe


Ingredients
2 cup cooked rice
1 cup kidney beans or black beans, soaked and boiled
1 cup corn, boiled
1/2 cup onion, finely chopped
1/2 cup tomato, finely chopped
1/2 cup green bell pepper, finely chopped
4 cloves garlic, minced
3 tablespoons butter
Salt to taste
2 tablespoons tomato ketchup or tomato puree
1 tablespoon cayenne pepper powder or red chilli powder (adjust according to your taste)
1/2 teaspoon vinegar
Cheese optional . If added, add only during serving time. Just heat the food topped with cheese and serve.
  • Method:
  • To begin making the Vegetarian Mexican Fried Rice recipe, heat a heavy bottomed pan on high flame and add butter. Add garlic and onion and cook for 1 to 2 minutes.Then add green pepper and tomatoes and let it cook for another 3 minutes.Next add corns and beans and give a nice stir. Add seasoning at this stage.Add salt, red chilli powder, tomato ketchup and vinegar. Cook for another 3 minutes.Finally add rice and mix it well. Let it cook for just 2 minutes. Salads generally served in room temperature or chilled. BUt for this weather we cant have it chilled so for a change lets have warm or hot salad..... STIR FRY SALAD2 Ingredients: carrot-1 fresh green peas-3tbsp beans-4nos black sesame seeds-1tsp olive oil or sesame oil-1tbsp salt a pinch pepper or chilli flakes a pinch optional onion-1 Method: Using the peeler peel the carrots after cleaning it. cut bean into thin stripes. cut onion into thin pieces. You can use any type of vegetables in thin strips. Heat oil and stir fry all the vegetables by tossing it. Make sure the vegetables are just heated but not cooked more than half.
