INDIAN VERSION OF MEXICAN RICE INGREDIENTS: Basmathy Rice or normal rice-1 cup Fully ripe Red Tomatoes-5 medium size Onion-1 medium size Red Chilli Paste-1 tsp (according to spice need) salt as needed Cheese grated -3 cubes Coriander Leaves- 1 tbsp chopped Green Chilly-1 Clove-2 Water as needed according to cook rice Olive oil or sesame oil Tomato Sauce or puree-1tbsp METHOD  Soak rice for half an hour. Mean time chop tomatoes finely. Chop onions finely. cut green chilly into half. Heat oil in a pan and saute the onions till they are golden brown. Then add tomatoes and saute till the raw smell goes. Then add Chillie, Chillie paste, salt and cloves, Sauce and saute till everything is cooked. Heat water approximately 2 cups which i took and add soaked rice and all the fried items and cook until rice is soft. I have used electric cooker so it was easy for me to check he cooking consistency. Once cooked add coriander leaves, half of Grated cheese and mix with fork. Ad
