Strawberry pancakes
Ingredients

1 cup whole wheat flour
1 cup ground oat flour
4 tsp baking powder
1 tbsp brown sugar
1/2 tsp salt
2-3 tsp cinnamon powder
2 tsp of nutmeg (optional)
11/2 cup whole milk/almond milk
2 eggs
2 tsp vanilla extract/almond extract
1 cup plain Greek yoghurt 
1 cup fresh strawberries, chopped/blended into puree
1 tbsp butter/coconut oil/non-stick cooking spray

Method
In a large bowl, whisk together whole-wheat flour, oat flour, baking powder, sugar, salt, cinnamon and nutmeg.
In another bowl, whisk together milk, eggs and vanilla extract. 
Pour the liquid mixture into the flour mixture and mix well till smooth. 
Add yogurt and strawberries and mix well. 
Heat a medium size non-stick skillet or griddle over medium heat and grease with butter, coconut oil or non-stick cooking spray. 
Spoon a quarter cup of the batter onto the pan for each pancake and cook till bubbles form around the edges of each pancake, about three minutes. 
Flip and cook for one to two minutes more. 
Transfer pancakes to a plate and serve topped with maple syrup and any additional fruit of choice.
