RICE 1 VEGETABLE BIRIYANI

VEGETABLE BIRIYANI:
Dont know why biriyani is so favourite and a crazy food for everyone weather Indians or westerns. Biriyani has different style, moghul, madrasi, ambur, and so many names .....and brands......
As a foodie i also has my kind of biriyani style......playinf myself with recipe is my favourite one and ofcourse my loved ones are my test rats ....(As i did Nutrition Food Service Management and Dietetics always i consider my kitchen as laboratory and my loved ones as test rats..... LOL) This time my niece and nephew were asking me to to do fried rice and it ended to biriyani as i didnt have soy sauce in kitchen. 
Biriyani making is easy but its the order that we put the ingredients and the quantity of the ingredients we cook.....

Ingredients:
Biriyani Rice(i took india gate basmati rice)-2 cups
water -(1:2 ratio)-4 cups
onions-5 medium size onions.
tomato-3 medium sized
coriander leaves-8 tbsp
mint leaves-10 tbsp
salt as needed
garam masala-1 tbsp
star annise-1
cloves-5nos
cinnamon-1/4 inch
pepper corns-4nos
brinji leaves-1
cumin seeds-1 to 2 tsps
sounf(fennel) seeds-1 tsp
ginger garlic paste-4tbsp. take the freshly prepared
curd-1 cup
carrot, bean, cauliflower , potato, vegetables of your choice-200gms
lemon juice-3tbsp
turmeric powder-1/4 tsp
asofoetida-1/2 tsp
mustard seeds-1/2 tsp
oil as needed
green chillies as per your spice . I took 5 nos as it was less spicy. 
chilli powder-1 tsp
Method:
Pre preparation:
1. cut onions very thinly.
2. cut chillies lengthwise.
3. prepare ginger garlic paste 1:1 ratio
4.clean and cut vegetables and clean mint and coriander curry  leaves and chip roughly.
5.chop tomatoes

Preparation:
Heat pan and let the mustard pop in the oil. Add cut onions and fry little then add the spice items except garam masala.
Add half of coriander and mint leaves, green chilli and saute .Then add cut tomatoes and ginger garlic paste, turmeric and saute till tomatoes are juicy and well cooked. Add vegatables, salt, little chilli powder, asofoetida and garam masala , curd and lemon juice. Let the vegetables are half done.

I have used India gate basmati rice and a electric cooker. So i cleaned the rice and took 4 cups of water and the 2 cups of rice in an electric cooker and then added all the gravy vegetables and cooked. when it is half cooked i have added little ghee, remaining mint and coriander leaves on it and continued cooking. When rice is cooked slightly mix with forks and serve hot with fried onions or caramalized onions on top with raita of your choice.
Your yummy biriyani is ready.

If you want richness you can add saffron when the rice is half done. Also fried nuts for richness.

Salads generally served in room temperature or chilled. BUt for this weather we cant have it chilled so for a change lets have warm or hot salad..... STIR FRY SALAD2 Ingredients: carrot-1 fresh green peas-3tbsp beans-4nos black sesame seeds-1tsp olive oil or sesame oil-1tbsp salt a pinch pepper or chilli flakes a pinch optional onion-1 Method: Using the peeler peel the carrots after cleaning it. cut bean into thin stripes. cut onion into thin pieces. You can use any type of vegetables in thin strips. Heat oil and stir fry all the vegetables by tossing it. Make sure the vegetables are just heated but not cooked more than half.
