PANEER SNACKS AND DISHES

PANEER BUTTER MASALA HOME STYLE Ingredients: Paneer-200gms Tomato ripe fully-3 big size Onion-2 medium size Ginger Garlic paste fresh-1 1/2 tsp Coriander-3tbsp Cumin Seeds-1tsp Cloves-3 to 4 saunf-1/2 tsp cinnamon-1/2 inch Butter-2 tbsp Oil-1 to 2 tbsp salt- as per need Pepper-5 kernals Green Chillies-2 Fresh Cream-1 tbsp Tomato puree or ketch up-1 tbsp Chillie powder-2 tbsp Asofoetida-1/4 tsp Turmeric-1/2 tsp METHOD: Heat pan add little butter and oil and saute onion and all masala items(cinnamon, cumin, pepper corns,saunf, cloves) and fry till onions are transparent. Add Tomatoes, ginger garlic paste tomato puree and coriander .Fry till raw smell goes and add turmeric powder salt, chillie powder and cubed paneer and fry for few minutes. Then add butter and saute 2 minutes. Add Fresh Cream and remove from fire and Garnish with coriander butter and little cream. CHUTNEYS

GARLIC CHUTNEY Ingredients: Garlic peeled-1 cup Tamarind paste-1 spoon Red chillies-6(depending on the hotness) Salt as per taste Sesame oil-5 tbsp Mustard seeds- 1 tsp Curry leaves-few Method: Grind garlic, tamarind and chillies all together with salt. Heat pan and heat sesame oil and add mustard seeds. Let it pop out add curry leaves and then the grinded paste. saute till raw smell goes. Serve with Idly Dosa, Chapati or with curd rice.  Nutritional Info: contains magnesium, manganese, riboflavin, thiamin, niacin  and high in vitamin C, Iron, calcium, phosphorous and good fat. Good for acidity issues, obese issues as it will help cut down fat, helps remove gas formed in stomach and intestine. SAGO (JAVVARISI VEGETABLE UPMA: Ingredients: Onion-1small cut into small pieces sago (Javvarisi) big one-2 cups beans cut into small pieces-1/4 cup carrot small pieces-1/8 cup coriander leave-2 tbsp curry leaves few potato cut into small pieces-1 Asofoetida a pinch salt-as needed cumin seeds-1 tsp turmeric a pinch or optional oil as needed mustard seeds-1/2 tsp green or red chillies as needed coconut grated-3tbsp optional lemon juice-1 tbsp optional curd or buttermilk-1/2 cup Method: Soak sago in little water and curd for 1 hour. Heat pan and pour little oil and when oil heats up add mustard seeds. After musterd seeds pop up add onion and fry till transparent. Then add all vegetables and fry till they are cooked well. Add turmeric powder, salt. Once the vegetables are done add soaked sago and asofoetida, grated coconut, little coriander, curry leaves, cumin seeds and mix it and sprinkle little water .
